CHOOSE A MENU SIZE
We decide on an ideal menu size for your establishment - choosing what products will become constant and how many will be seasonal.  This then becomes our base menu template that will be used for the menu change every quarter.  We follow the seasonal trends while putting your establishment’s unique spin on it.  A seasonal menu is incredibly exciting for your clientele and ensures constant interest in your supply.

PLAN A FLAVOR PROFILE
We talk about what seasonal flavors make sense for your establishment.  In addition to considering seasonal favorites, I will also consider flavor combinations that pair well with existing seasonal items on the menu (seasonal drinks/food).

PLAN AHEAD
Your clientele knowing that items rotate is fantastic for sales, BUT this is a lot of work.  We communicate a LOT.  Ideally the next season’s products will be agreed on 2 months out.  This helps ensure the least amount of chaos for your staff while they deal with new menu items and recipes.

TRAIN STAFF
Seasonal menus can be very stressful for staff.  2 weeks before menu change, I come to your establishment to make everything at location and ensure there are no issues on sight. This same week I train staff on the new menu items.  This gives time to iron-out any confusion for staff.  Depending on menu size and complexity, I will also come on the first week of menu change to ensure a smooth transition.

HOLIDAY DESSERTS
You choose 6 holidays/events to have a specialty dessert designed for. These desserts will be seasonally appropriate to the holiday and visually appealing. Marketing is highly recommended for a seasonal menu in general, but holiday specials especially are great for drawing in customers.
